Pineapple Honey BBQ Beef Ribs

Tender beef ribs marinated with pineapple and finished with a sticky honey BBQ glaze. Make them low and slow in the oven or on the grill.

Ingredients

  • 1–2 racks beef ribs
  • 1 jar pineapple chunks or crushed pineapple with juice
  • 1 bottle Sweet Baby Ray’s Honey BBQ Sauce
  • As needed yellow mustard
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp smoked paprika
  • Optional brown sugar
  • Optional cayenne pepper
  • Optional Worcestershire sauce

Prep the Ribs

  1. Flip the ribs bone-side up.
  2. Use a butter knife to loosen the thin silver membrane on the back of the ribs.
  3. Grab the membrane with a paper towel and pull it off completely.
  4. Lightly coat both sides of the ribs with yellow mustard.
  5. Season both sides with salt, black pepper, garlic powder, onion powder, and smoked paprika.
  6. Optional: add brown sugar and a pinch of cayenne for extra sweetness and heat.

Pineapple Marinade

  1. Mix half the jar of pineapple with juice and 2–3 tablespoons of honey BBQ sauce.
  2. Pour the pineapple marinade over the ribs.
  3. Marinate for at least 2 hours. Overnight is best.

Oven Method

  1. Preheat the oven to 300°F.
  2. Place the ribs on a foil-lined baking tray.
  3. Add a little pineapple juice to the tray.
  4. Cover the ribs tightly with foil.
  5. Bake for 2.5 to 3.5 hours, or until tender.
  6. Remove the foil.
  7. Brush the ribs heavily with Sweet Baby Ray’s Honey BBQ Sauce and a little pineapple juice.
  8. Broil for 3–5 minutes, until sticky and caramelized.
  9. Optional: add pineapple chunks during the last 10 minutes.

Grill Method

  1. Set the grill for indirect heat around 275–300°F.
  2. Place the ribs away from the direct flame.
  3. Cook with the lid closed for 2.5 to 3 hours.
  4. Every 30–40 minutes, baste the ribs with a mixture of BBQ sauce and pineapple juice.
  5. Move the ribs over direct heat for 2–4 minutes per side.
  6. Let the ribs caramelize and get a slight char, but watch carefully so the sugars do not burn.

Notes

Beef ribs are best around 200–205°F internal temperature. The meat should pull back from the bones. Let the ribs rest for 10–15 minutes before slicing. Do not marinate in pineapple longer than 24 hours, or the meat can become mushy.
